Title: Peel-A-Pound Soup
Yield: 8 Servings
Ingredients
1 head cabbage; small
4 lg onions
2 cl garlic; diced
1 bu celery
1 lg green bell pepper
1 can tomatoes; diced (large
-can)
2 medium potatoes
1 box onion soup mix (2 packets)
3 cups vegetable stock
Instructions
Clean veggies and cut into medium size pieces. Add all ingredients
to stockpot/soup kettle and finish filling with water until it just covers
the vegetables. Bring to a boil, and then reduce to a simmer and
cook for 2-1/2 to 3 hours.
This soup can be eaten between meals as often as you wish, and you
will actually lose weight, because it takes more calories to digest the
soup than you get from it. It also is very filling so you tend not to
over eat and snack on junk. The more you eat, the more you lose.
Comments: I made this and it was pretty good, and yes it is quite
filling.
I just had it for dinner. The recipe makes a TON of soup, I don't know
if it freezes well yet. Enjoy!
